I like to make a veggie hash (make at night or on a weekend and save some for weekday mornings).
Chop up sweet potatoes, spinach, onions, mushrooms, and whatever else you have/like. Season with cumin, garlic, salt, cayenne, etc. Sometimes I even throw in a little turkey kielbasa. Serve with a poached egg or two on top :)
if you don't want to gnaw on carrots for breakfast, don't. one of the easiest solutions is to make up a little bit extra of whatever vegetable side you have with dinner and have that. some sauteed mushrooms, cauliflower and peppers [or really any sauteed veggies imo] are an excellent side to a bagel with cheese. vegetable soup is also an option. and the absolute easiest thing to eat is leftovers from last night's dinner. there isn't anything that says you have to stick to cereal or omelets.

I almost always have veggies with breakfast which many people find strange, including hubby. lol Most people are accustomed to bacon and eggs, where I am accustomed to asparagus and eggs. I like to poach the eggs over top of freshly steamed asparagus. Instead of the traditional steak, egg, and cheese, I like to pan fry a large portabello mushroom, and top it with egg and cheese. You can make it taste similar to steak by adding the right seasonings, and I even like a little A1 on mine! I also love veggie scrambles or omelettes, usually with onion, pepper, mushroom, and spinach. Greek yogurt has a good amount of protein without the fat and you can add fruits and veggies to that for a morning smoothie or shake. I peel and freeze over ripe banana's as they are very sweet and combat the flavor of the spinach or kale. I also like to add nut butters and unsweet cocoa powder to make a chocolate peanut butter shake. :) I agree with Becky about the 2 1/2 ounces of protein, a serving of protein is usually 4oz. All though I have been trying to eat a little less meat myself......

I think you are really getting some inappropriate advice. There is no reason for forcing down veggies at breakfast---if you don't want them. Including fruits and veggies throughout the day at meals and snacks---can assure that you meet the minimum of 5 a day. Don't feel you must have veggies at breakfast.
Also, unless you have a medical condition that requires to you limit protein, then limiting meat to only a 2 1/2 ounce portion at a meal is not necessary. In fact, the latest research for weight loss suggests about 20-30 grams of protein at every meal.
Also...Pork Loin is not a fatty meat, it is very lean and can easily be included in a weight loss program.
I will sometimes make a breakfast sandwich and add tomato and spinach to it. You can make fritattas using left over meat, vegetables and even pasta. People make "green" smoothies using spinach and kale. I've even had salads for breakfast- Spinach, with cucumber, tomato, and dried cranberries with a berry vinaigrette. Throw in a hard boiled egg and you have a super salad and a great way to start the day.

You could make a yogurt shake ( enough for 2 days ) with several fruits and throw in some fresh spinach, that would give you at least 2 for the meal. Or, you could add an extra veggie to lunch/dinner instead so you end up with at least 6 or 7 all together at end of the day.
i met with a nutrionist / personal trainer yesterday
she suggested I -- try eating a veggie with every meal
i just cant see me knawing on a carrot at breakfast
and I didnt have any eggs or eggwhites today to make a veggie omelet
i supose i could make a kale protein shake ..?? any suggestions for breakfast ideas that include veggies .. i have to stay away from fats like pork meats and today i did have red meat but i measured it was only 4oz a dietican i spoke to last year said one should never have more than 2 oz of protein per meal .. so if you read any recipe book - none of them ever call for 2/12 oz of protein its usually 6 to 8 oz -- no wonder so many people are overweight??
i guess i should consder an over eaters annonymous club but doesnt that just focus on being overweight?
