As a dietitian, I don't necessarily agree with the content in the shared link. While there is some nutrient loss for certain vitamins---cooking can actually enhance absorption of some phytochemicals, etc.
Bottom line...eat veggies, in a variety of ways. prepare/serve veggies in a way that you enjoy them. If using some water in the preparation---save it to use for a soup, stew, smoothie, etc.
Just eat your veggies (fresh, cooked, frozen, canned) and enjoy!
