for Breakfast-- a smoothie works wonders. You can even add broccoli which is great for you and not even taste it. i make one every day and probably put close to four servings of veggies and two servings of fruit. i use either water or almond milk as I do not do dairy. The veggies that you would know are in there are bell peppers, celery, and cilantro.
For lunch-- I make myself salads-- I don't overuse greens. A lot of my salads are not lettuces. I make beet and carrot salads. i use jicama and other turnips-- chop them fine in a food processor and add spices and other things and it is good too.
I don't eat cooked veggies. I like the texture of raw so much better. Some people will say that some veggies have to be cooked-- but I don't agree. Raw green beans in a salad are awesome. Kale can be consumed if it is worked the right way.
