I don't know what the law is in the USA but in the UK a shop can only sell something beyond its sell-by date if it is clearly marked to show the date. Usually, the price is reduced to take the date into account.
We have different types of date here - a "best before" date is a recommendation but the product can still be sold beyond the date provided it is clearly identified.
A "use by" date is a legal thing and the product must not be offered for sale beyond that date.

I doubt there is anything wrong with your water at all but I would take it back to the shop to point out to them what they did. At the very least, they should give you another 8-pack for free!

Since it's a multipack and you have 7 bottles left, yes I'd take it back if you still have the receipt.

But water is hardly likely to have any products in it that 'go off'. The date is much more likely that 'best by' rather than an actual expiry and it simply just may not taste as fresh and lovely as you might hope.

You're also only JUST past the best by, so if you're planning to drink one a day or something, that's still going to be pretty close to it.

I wouldn't worry about it, if you can't return it.

if you just bought it i would take it back.
the other important thing to look at besides the date is if it says "best by," "use by," or "expiration date." "best by" means that item is best by that date. it's unlikely to kill you after that date, but it might not be at its freshest. think chips. if you have ever had chips a little out of date they are stale, but not likely to cause you to come to harm. most waters i have seen have "best by" on them. personally i have had water about 2 years past the "best by" date, but that was also plain water. i lived and was fine.
"use by" or "expires on" tend to be a little more end of life for the product. less than three weeks out i wouldn't worry too much if i already had it, but if i am considering ingesting something like that i tend to go by what it is, taste, smell, exactly what it is and other obvious signs of it being okay. and i tend to err on the side of toss it for those two options.

-google first. ask questions later.
