Hi. After much investigating and record keeping, I discovered, after decades of symptoms, that my problem was gluten. That was over ten years ago and it only took about 4 days to discover that I was right. I used to have miserable headaches, but not one since then. The one thing I practice is, if I'm not sure about any food, DON'T EAT IT.. Any mistake means painful cramps and absolutely horrid diarrhea for a few days. So I love being gluten free!!!
I have been totally gluten free since November and I ate very limited gluten for about a year before that. It has totally changed my life for the better. I replaced gluten containing grains 80/20 with vegetables/gluten free grains.
A few chronic conditions have cleared up including my lifelong constipation, keratosis pilaris, joint swelling and sinus problems. My body composition has improved as well which is an added bonus.
I haven't been tested for celiac although my Dr has offered the test. We talked about it and both agreed that to make myself ill by eating massive amounts of gluten in order to take the test would be silly. I obviously have at the very least an intolerance and if I feel better not eating it then I just shouldn't eat it.
A funny story...
This spring I was walking down the street listening to my I pod when a woman stopped me and asked the most bizarre question.
"This is going to sound strange," she said. "Do you eat gluten?"
"No I don't." I said perplexed.
"I knew it! She exclaimed. "You just look so healthy!"
I was blown away! I mean I feel great, but to actually have a stranger be able to look at me and see health is just astounding!

One of the major problems with being Celiac is that the GF breads, cereals and baked goods tend to be VERY high in sugar. 1 small piece of GF multi grain bread has more calories than 2 pieces of wheat bread. Whole wheat, rye and barley grains have a lot of nutrients and fiber in them, you really have to make sure you are getting enough of the right kind of nutrients and fiber from your diet without them. I would check the internet and join the official Celiac websites to find people who actually have the GF issues and get accurate information. Good luck

I have some Celiacs in the family and tried gf lifestyle to see if it would help me. It wasn't my issue, but I feel for you! It's a tough lifestyle to get used to. I was gf for 6 months, and it taught me a lot about label reading. :) Good luck!
