What a good idea, and a fun cooking/eating project!

The public library is a great resource for cookbooks, and there are many cookbooks that focus on vegetables and fruits. I like "Fast, Fresh and Green" by Susie Middleton:

Find a vegetable that looks interesting, then go to a recipe site and do a search for it. You're bound to find a lot of ideas.

Hi Sarah,
First of all you should try the Spark Recipes page. It's awesome and has recipes created by Spark People members, and Chef Meg. The recipe not only contains ingredients amounts, and cooking instructions, they also sometimes include little stories about how they originated, allowing you to get to know a little about other Sparkers. They also contain serving sizes, suggested serving amounts, and nutrition information. Best of all, if you like a recipe and plan to make it part of your eating plan, you can import it right to your nutrition tracker, and to your favorites. Here is another site that I use to find great, pretty healthy (most of the time), recipes and info on vegetables. I put the link below. I hope this helps, and you find what you're looking for at either or both of these places. :-)

I am trying to add more veggies and fruits into my diet beyond just the ones I know and eat. I don't go too exotic for the most part and really can get tripped up with all the different vegetables out there. I think for me if I knew how to cook some of them and what they could be used for in meals and just eating raw would be really helpful. I am not sure how to go about trying one if I am not sure whether to find a recipe to cook the food in or just what its commonly used for and figure something out. Any ideas on how to figure this all out would be great. I think just figuring out what foods are out there and their versatility or just use could be helpful in getting more fruits and veggies in my diet.
