ANARIE - thank you, I am going to try it in as many things as I can think of as I hate to waste a perfectly good product. Ha ha, I, too, have a 'frugal-bone'.

I think the liquid whey listing is probably about right-- that's what I use. It's a little lower in calories than buttermilk.

And that's how I use it, in place of buttermilk in recipes. It makes super-fluffy waffles and pancakes and cornbread. Recently I used it in place of milk in a yeast bread, and it came out like really good sourdough.

I really like the fact that I can take a half-gallon of inexpensive milk and turn it into almost 2 quarts of yogurt and a quart of buttermilk substitute! It makes my frugal-bone happy.

I made a batch of greek yoghurt a few days ago and have frozen the liquid (whey?) strained off it in ice cube trays, about 30ml each portion. Does anyone have any idea how many calories might be in a 30ml portion? I did a search using 'whey liquid' but I'm guessing this could be very different to what I have. I was thinking of adding a couple of cubes to smoothies to use it up. Is there any other way I could use it - I believe you can use it as liquid when you are making bread but would appreciate any suggestions. (I googled it and have found loads of uses but would still be interested in hearing of the experiences of other people.)
