One day is not going to cause you to gain weight... especially since I'm guessing you'll only be a couple hundred calories over, right? It's all about your overall average intake, not what you do on one day. Try eating a little less tomorrow and the next day if you're super worried about it.
And, don't freak out if you step on the scale tomorrow and see a gain. Chips and ranch dip is SUPER high in sodium, and I know for me, food like that always causes a temporary "weight gain" from all the sodium.
Lastly, if you're finding yourself craving "bad" foods often (which is causing the mini-binges), then maybe figure out a way to work them into your plan every now and then*, maybe schedule them ahead of time so when you start craving them, you can tell yourself "well, you're scheduled to eat that on Thursday, so you can wait til then".
*Edit to add: When you work them into your plan, keep the serving reasonable. Noticed you had 3oz of the chips... when you allow yourself to have them, have 1oz instead. Hard to do, I know, but if you take them out and put on a plate and put the bag away, then eat them slowly, you'll probably find that that 1oz is enough. Same for the dips, spoon it onto the plate, put the container away.
