One thing that will help is if you are tracking your nutrition here, to create a Sparkpage and share your nutrition trackers. It's really tough to make suggestions when we don't know what you're eating day to day.
If you're getting over 100 carbs, and your range is 100-140 carbs, then that's where it's supposed to be.
However, the menu you just listed wouldn't be that high in carbs, unless you're eating really high-carb fruits (which aren't bad at all, just some are high in carbs.)
