While this is still an eggs dish, I find I can really shake things up by making omelettes. I throw in spinach, or bacon bits, or turkey, or just about any veggie, add some fun seasonings, and VOILA: instant awesomeness and very easy to change it up. I'm also lactose-intolerant, and swear by the lactose-free milk from Wal-Mart--the great value brand, because I find Lactaid to be too sweet. I also make protein waffles--I throw in a fourth of a cup of oats, half a scoop of protein powder, two crushed walnuts, a sprinkle of cinnamon and salt, an egg, 1 tbsp of lactose-free milk, 1/4 tsp of baking powder, and a little water to help it go into solution--this is about 250 calories and has about 20 grams of protein. :) I also like cutting up half a fruit and adding it to breakfast--grapefruit, oranges, apples, or pineapples are my favorites (you can also do a smoothie, but I prefer to eat my fruit rather than drink them, personally). I (unfortunately) can't do Greek yogurt even with active cultures, because it KILLS MY STOMACH (stupid lactose), but you could also get some of the Lactaid cottage cheese and either food process it (it makes it into a sort of yogurt) or not and add a little fruit (I also like a touch of honey, but I see you want to cut out the sugar).
