1 cup of milk, 1-2 cups of fresh spinach leaves, 1 cup of frozen or fresh fruit of your choice, and any extras like flax seeds or olive oil make a great smoothie in the morning, and great for 'on the go'.
Eggs with guacamole and spinach in a tortilla wrap is also a great grab-and-go breakfast. If it's the eggs you're tired of, substitute fish, beef, chicken, whatever.
Sometimes just a regular bowl of cereal in milk with some fruit or peanut butter just hits the spot. There's a great cereal called Mesa Sunrise (Natural Path brand) that is very tasty.
If you have more time in the morning, a stir fry over rice can be very filling. The veggies can be pre-cut the night before to save time, also.
I've been known to have vegetable or lentil soups for breakfast as well.
Of course, I've also been known to have chili, spaghetti, and hamburgers for breakfast. Pretty much, if I'll eat it at any other time of day, I'll eat it for breakfast, too. So take your favorite meal and just eat it for breakfast, see how that goes. :)
