I'm OBSESSED with salads, they are my favorite food. Everyone looks at me weird when I say that, but salads are just so freaking delicious.
I always use fat free Italian dressing or if available, any form of vinaigrette (raspberry vinaigrette is to die for). I eat them with grilled chicken, tuna, salmon... any grilled white meat (not a fan of red). I skip the croutons. I add peas, carrots, onions, peppers, kalamata olives, and very little cheese (my biggest temptation). Sometimes I add a little chili powder if available, and spinach.
Salads are tricky. I love them now, but after years of experimenting to find what I like. So keep experimenting!
Salads can stop being healthy, though, if you start bathing them in fatty dressings like Ranch, or when you start adding bacon, or fatty foods. I'd also watch out for corn, as it contains a lot of sugar. I remember when I was little we used to go to Pizza Hut all the time and my dad would always eat a salad before his pizza because he wanted to get filled up on something healthy so he wouldn't eat so much pizza. Well, he'd get a monster salad drenched in Bleu Cheese with bacon, beats, corn, anything he could find. His salads always ended up being more unhealthy than the actual pizza.
If you love veggies, I'd say indulge yourself, as long as you don't go overboard and that's all you eat all day. I'd try to stick to a more balanced died, maybe introduce brown rice every once in a while instead of veggies, but I'm a veggaholic, too, so I can't judge. Just don't go overboard. I remember one time I became obsessed with carrots and I'd eat them every day... until my hands turned orange. That's when I knew I had a problem hehe.
My dad went through a banana phase and landed in the hospital because his potassium levels were out of this world.
