while you may not need every spice and herb...track the big stuff: the amount of meat, the amount of oil/fat, the amount of rice, etc.

get a food scale with a tare button. while you are cooking, weigh whatever you add before you add it. it's as simple as keeping a container/plate/pot pan on the scale tared out, tossing on whatever you are planning to add it, making a note of the weight and the item, and tossing it in the pan.

-google first. ask questions later.

I rarely cook from a recipe. If it's something I'm used to making trying to follow a recipe ends up with the meal ruined. So I end up guessing how much of an ingredient I've put into the food. How bad is that? I measure out the portion I eat.

One more step in a long journey.
