Oh! Thank you. I have only ever used canned so I thought it weird to not cook the fish before cooking it in the patty, but I will try it and see how it goes! Thanks so much!

Canned salmon is cooked with the canning process and could be eaten from the can safely.

However, for your salmon patties, you could use the raw meat, add other ingredients, shape into patties, then brown in skillet to an internal temperature of 145 degrees and the patty would be safe to eat. This is the correct cooking temperature for all fish.

This is a silly question, but I want to make salmon patties tonight. I do not have canned salmon, but I do have frozen fillets that I moved to the refrigerator this morning before leaving.

How would one go about cooking a salmon fillet to use in a salmon patty?

A recipe I looked up that used fresh salmon in a salmon patty didn't say anything about cooking it beforehand. Isn't canned salmon already cooked?
