if you're making something like a stir-fry, and use 1T oil; I count it as part of the whole. If you're deep frying (which I normally avoid); I'm not sure how to count it - perhaps allow for the absorption of 1T per serving?

I guess it depends on HOW you are cooking with it. When I use oil, I use it sparingly, but count it all. I don't fry in oil.
