Pat the Fries dry so that they don't steam. You can do this by laying a clean tea towel on the bench, putting the fries on it and folding the cloth over, them massage them. I just heat up an oven tray or low-sided baking tray, then lightly spray it with oil, place the fries in a single layer onto it, and then lightly spray them again, the put them into the hot oven. You can sprinkle them with dried herbs, finely chopped Rosemary, or Lemon Pepper, etc before you bake them, too, if you want.
