You have a lot going on, so don't beat yourself up. The other poster is right - you need to give some time to yourself each day to make sure you get healthier.
In addition to exercising, which is a GREAT stress fighter, you might want to consider reaching out to a caregiver support group in your area. If you can go even once a month just to vent and talk to other people who are going through very similar situations, it could be a huge help.
As for the junk food, I know it can be hard to take away from some people, but you may want to consider getting some of it out of the house. Rather than all of it, maybe you get rid of half of it, or bargain with your boyfriend and son about what can stay and what goes (and how much!). That way, everyone compromises but nobody completely loses.
