Try eating the egg yolks!
I'm serious. The yolk contains most of the vitamins and minerals in an egg. In fact, an egg is one of the most complete foods you can eat (though it does not contain vitamin C)- but that's only with the yolk.
The whole deal about cholesterol is a load of nonsense. Not only is there NO evidence that the dietary cholesterol in egg yolks lead to heart disease and high cholesterol. In fact, the vitamins and minerals in eggs can actually be beneficial to heart health!
If you're avoiding egg yolks for caloric purposes (which is understandable as a volume eater), I would suggest going for the pure liquid egg whites, but NOT Egg Beaters. Egg Beaters can have about 20 ingredients. (Why people think Egg Beaters with 20 ingredients are better than a whole, natural egg is beyond me).
Of course, you could always take the Rose Nylund approach and put them into a ziploc bag to give to the homeless. Just be sure you don't stay up for 72 hours trying to write a great new southern romance novel. Otherwise, you'll start seeing "little balls of sunshine in a bag" when you look at those egg yolks you are going to donate to the less fortunate.
