The meal plans do work, but they are really more of a guideline. You can always substitute items if you would prefer not to eat a certain something. If it says white rice, for example, you can always sub for brown, or if it says lettuce you can sub for kale.
Just be sure to update the item on the plan to reflect appropriate nutrition information.
I don't really eat eggs or red meat, so when I use the meal planner (I don't always) I will sub for something else- pork or chicken in place of red meat, and egg beaters or tofu instead of eggs.
