See below about commercial chips and them being mainly corn or potato starch -- that's fascinating, BUNNYUNE --, let's say. But, sure ... if you make your own chips and they're just dehydrated or roasted vegetables with a little oil for crispiness ... why not count them as a serving of vegetables? Especially homemade sweet potato, beet, or kale chips.
But there's a part of me -- snarky Wednesday me -- that thinks, if one has to worry about whether vegetable chips count as a vegetable, one is already asking the wrong question and should not be worrying about veggie chips but about getting more fresh or frozen vegetables into the diet.
