Mind you this was a rather long time ago, but I lost a ton of weight eating in the dining halls.
Our dining hall had an awesome salad bar with lots of choices so i made different types of salads for lunch and had a large one for dinner. I would put my protein source on top of the salad-- sometimes they had chicken or beef roast cut up on the bar. Depending on what they had in the hot line, i would go for the undressed chicken or roast beef. I didn't like how they did their fish so I steered away from that.
For breakfast, I would have 1/2 a bagel with peanut butter. (I was never into cream cheese, because I never cared much for dairy, but that could be an option too.) I may have done a waffle. If you like eggs that may be an option for you depending on how they are cooked.
luckily I worked in the dining hall and knew the cooks really well. If they didn't have grilled chicken that day, I would ask for one and they made it for me.
Personally I thought eating in the dining halls were easier than trying to find time to make my own dishes since I lived in the dorms all four years anyway. No dishes to wash, no menus to plan. I also think colleges are getting better with choices. There are a lot of different lifestyles on a campus.
