these are some of my usual contributions
guacamole (mash fresh avocado with some salsa)
tabouleh (time consuming, but I love it!)
a salad with spring mix, colored peppers, fresh asparagus, tomatoes, cucumbers, raisins, chopped walnuts, and some shredded asiago cheese
pasta salad (pasta, beef stick or pepperoni, carrots, red pepper, black olives, and Italian dressing)
brown rice with black beans, lean ground beef and some enchilada sauce
