My other suggestion is trying to incorporate smoothies once a day. It's a great way to get fruits and veggies, and you can just add whatever protein base you like (powders or tofu, or nuts). This really helped me bump up my daily nutrition.
I suffered from more cravings when I wasn't getting 60-70 grams of protein daily. So I'd encourage you to eat lots of vegetarian proteins, legumes, nuts, seeds to help =). Including fiber and fat really helped me.
I'm not vegetarian, but my favorites are: pumpkin seeds, walnuts, sunflower seeds, almonds, peanut butter, flaxmeal, BEANS of all kinds, Hemp protein powder... some of the cheese/dairy substitutes are very tasty too, but expensive... And also, the more veggies you eat, especially dark green ones, the more small amounts of protein you'll get. It does add up.
