I think it goes great with curry. I tear up a couple leaves and toss them in my curry sauce to cook down with the garlic and coconut milk and whatnot, it's delicious!

I like it steamed/blanched or cooked. It's also really sturdy and does well in soups. I've even thrown a handful into my morning smoothies.

My family LOVES kale chips. You just tear the kale down to bite size pieces and mix in a bowl with oil olive, salt and red pepper flakes. Cook at at medium temp for around 20 minutes. Yummy!

Kale and white bean soup:

Can of white beans
Bunch of kale, coarsely chopped (1-inch wide strips works well).
Onion
Salt, pepper and whatever other spices you like (we sometimes use garlic, usually smoked paprika and/or cumin, but use whatever you like. It tastes great just with salt and pepper.)
Vegetable broth, chicken broth, or water.
Oil or cooking spray

Saute onions until translucent. Add kale, broth, a little salt. Cover and cook until the kale is softened. Add beans and additional spices, salt to taste. Heat and serve.

It's really easy.

I've taken to putting it raw in my smoothies in place of spinach (spinach upset my stomach). I put about a cup of chopped kale in.

Kale Chips
- Remove spines and cut into 2 x 2 inch pieces (whatever makes a good chip size in your mind)
- Toss with some olive oil and salt in a large bowl
- Lay out on a greased cookie sheet in a single layer (you will need to do a few batches to do a whole bunch of kale)
- Bake in the oven for 10 mins at 350F

We use kale in our power smoothies and salads...sauteed with lemon juice, steamed with red pepper flakes and a touch of olive oil...baked with tofu...Just about any way you can fix any vegetable, you can fix kale!

I agree with SPKrause.

Usually, I would steam kale in (a very small amount of) water with vegetable broth.

You also can throw leaves into the blender in your smoothie/green drink.

What's the best way to make kale chips? We do have a food dehydrator. It's a GOOD thing!

[1] steam and drain
[2] saute and/or wilt, perhaps with some sauteed veggies (onions, tomatoes, whatever)
[3] kale chips!
[4] massaged by hand (for 30 seconds to a minute) to break it down a bit and make it softer, then in a salad with other grens or as the only green in a salad.

I make it in my salads all the time. I also add it to my smoothies or juice it. I make kale chips as well, However I dehydrate mine. I don't like heating anything over 105 degrees.

saute with a little oil and onions, then put into a baking dish, cover with well beaten egg and bake until egg is set.

Delicious, I vary the spices, but usually black pepper, paprika, mixed herbs

Kale chips! They are my "junk" food of choice. I swear, I eat them almost every day.

I tried kale for the first time last week & loved it. I just steamed it, drained it & added a tiny bit of olive oil & fresh garlic. Although we enjoyed it like this, was wondering how does everyone else make theirs. I like to make veggies different ways not to get bored with them.

Thanks for any input.

Don't sweat the small stuff!!!
