I serve my morning eggs over a bed of cooked spinach, mushrooms, and red bell peppers. I've also been meaning to make this recipe. Looks really good and convenient. Cook uop a batch on Sunday and be set for breakfast for the rest of the week!

I usually add spinach to my egg whites and have a half of an orange or apple. I also buy the frozen bagels and use low fat neufchatel cheese, a slice of tomato and either baby spinach, sliced zucchini or sliced peppers. Easy to eat on the go for those busy mornings.

I like breakfasts I can make in advance in case I'm in a rush. You could try:

Mini crust-less quiches made with eggs and veggies in a muffin pan
Zucchini bread
Carrot-raisin bran muffins
Egg and vegetable casserole

Raw red pepper strips. Sweet and crunchy.
Make a veggie sandwich. Red peppers, cucumbers, tomatos, black pepper, sweet basil, lettuce, mustard.
Tomato or Vegetable juice.
Carrot sticks, Celery sticks.

A good plan.
There's lots of ways to incorporate veggies, as mentioned by others.
Think outside the omelette option - perhaps even a frittata, cooked in a large amount, and divided in portions for consumption more than one day

I usually put a hefty amount of spinach in my scrambled eggs ..and sometimes I even top them with tomato sauce. Another option is a veggie quiche.

On the weekends I make baked homefries with sweet potatoes. Mmm

I guess it depends on what you usually eat for breakfast. I don't eat traditional breakfast foods so it isn't any different than any other meal of the day.

What about celery or potatoes?
You can add most vegetables to eggs- tomatoes, peppers, spinach, broccoli, carrots, asparagus, etc.
Drink vegetable juices or add vegetables to a smoothie.

I don't necessarily have veggies at every meal but I am vegan so I eat more than enough veg at other meals. Breakfast is the obvious challenge but it can definitely be done. Veggies & beans on toast or potato, scrambles with tofu or egg, adding mild veggies to muffins (like carrots, spinach, zucchini) just be mindful of the slight addition of moisture as they cook, same with adding mild veg to pancakes. Green smoothies are a yummy breakfast and pack a great veggie punch. That's all I have off the top of my head.

I keep it simple. :) I just eat raw broccoli or carrots! Seriously, don't think "breakfast food" all the time for breakfast. Break out of that rut! Any vegetable you can eat for any other meal goes fine with breakfast. Heck, eat a nice, dark-green leafy salad!

Tomatoes are another vegetable that sits well at breakfast, with an omelette, or with grilled meats, even cold meats.

you could add spinach or kale to a breakfast smoothie. If you google green monster smoothie a bunch of recipes come up. I like to add 1/4 c. oats to my smoothies for a little more substance.

Good question Sharon! (I'm a Sharon too.) I think that is a great challenge and have struggled with breakfast veggies for some time now.

Of course add them to your omelet but right now I am tired of eggs. Those veg's are mushroom onion tomato peppers spinach etc.

Recently I had dinner leftovers for breakfast: chicken brown rice and lima beans. It was a very satisfying breakfast. Another thought is v8 tomato juice.

I will be watching this thread for ideas.

I'm going to do a 30-day challenge and my main goal is to add veggies at EVERY meal/snack. I'm pretty good later in the day but what do you add for breakfast veggies?? I do like onions and mushrooms so that is a good option. Any other suggestions? How do you add veggies to every meal you have?
