Cook some chickpeas (or drain a can), dry, then roast in the oven @350F or so, perhaps lightly salted and oiled. Let them start to brown then take out. They're crunchy and delicious ... put in a bowl and snack between meals.
As for fresh veggies: red peppers, broccoli, carrots, grape or cherry tomatoes. Olives and pickles
