Cauliflower rice is a staple in our house now -- easy way to get in some extra vegetables and get that something "extra" with a stir fry, in soup, under curry, etc. Love it!

Sometimes we splurge on "real" rice, but most of the time cauliflower rice does the trick and for a lot less calories. (We also do caulflower "mashed potatoes" sometimes as well.)

Starting Weight: 260 lbs. (November 2010)
Quasi-Maintenance: 165 lbs. (June 2011)
Goal Weight: 150 lbs. (reached December 8, 2011)

Size 22W to Size 4

Currently maintaining within 5 lbs. (+ or -) of goal. I weigh daily, but also use a tape measure and the fit of my clothes to guage how well I'm doing.

I just now made lunch of cauliflower rice stir fried with a pack of Thai stirfry vegetables and another of Quorn. Yumm! Started off with ginger and garlic and coconut oil, added leeks and then the cauli rice with a bit of soy sauce, then the frozen stuff. Good and quick too.

Sounds yummy! I'll have to try that.

Trying to lose the "baby fat" that crept on after 3 pregnancies in 7 years...

5'4", 40 (!), 3 kids (2 girls, 11 and 8 + one boy, 4), a husband, a dog, a cat, a guinea pig and a full time WOH job.

That's what I had for supper today (with stir fry). I do it in the food processor, then pop it in the wok with some coconut oil and stir-fry till it's a little bit dried up, more ricey and less vegetabley. The cilantro's totally optional (thankfully, cause I'm allergic to it). Use whatever you like to season rice with. I like to add a little garlic powder, salt and pepper.

I like it, my kid likes it. It goes under stir-fry, in sushi, anywhere rice goes :D

I did it in the food processor on Monday and kept it in the fridge, just cooking a cup at a time in the microwave. It really is fine like rice or couscous. It tastes great, if you like cauliflower, which I do. I added a spoon of plain yoghurt to the cooked cauli, just to moisten, really. T was good!

apparently, you can also do it in the food processor.

There's a lot of recipes on the Web that have cauliflower as a base in place of rice and other things like that. Think I'll have to start writing them down

I've heard that you can also make cauliflower pizza crust very easily. The recipe is floating around on the internet somewhere...

Over the years I have heard about taking cauliflower,cooking it and mashing it down to make mock mashed potatoes, but I had never heard of making it into mock rice until just recently when I happened upon it in a new cook book that I bought.

To create this dish you will need:

1 head of cauliflower
1 tablespoon of oil (I like coconut)
1/4 cup of chopped cilantro

Using a box grater, shred the head of cauliflower using the largest holes.

Saute the cauliflower in the oil over medium heat until translucent, about five minutes or so.

Season with salt and pepper to taste and toss with cilantro.

I have been mixing this with other vegetables and grilled chicken. Very satisfying and gives the sensation of eating rice without all the points.
