Over the years I have heard about taking cauliflower,cooking it and mashing it down to make mock mashed potatoes, but I had never heard of making it into mock rice until just recently when I happened upon it in a new cook book that I bought.
To create this dish you will need:
1 head of cauliflower
1 tablespoon of oil (I like coconut)
1/4 cup of chopped cilantro
Using a box grater, shred the head of cauliflower using the largest holes.
Saute the cauliflower in the oil over medium heat until translucent, about five minutes or so.
Season with salt and pepper to taste and toss with cilantro.
I have been mixing this with other vegetables and grilled chicken. Very satisfying and gives the sensation of eating rice without all the points.
