I would also throw in turnips, rutabaga, and kohlrabi along with everything listed below. I also dip mine in nut butters.

Thank you everyone for your helpful answers! The reason I ask for Raw Veg is because I want to bring them to work to snack on...and Raw would be easiest to prep - no cooking involved! I do eat cooked veg at dinner. Keep the suggestions coming!

Raw veggies that I like to eat include celery, broccoli, cauliflower, sweet peppers, cucumbers, and tomatoes. It's good with hummus, some low fat ranch dressing, and the cucumbers and tomatoes are good with a balsamic dressing or vinegar.

I have been buying cauliflower, broccoli, celery, carrots, etc., and putting them in a "buffet" on the table while I cook dinner, so if anyone wants to snack, they are available.
Discipline is just choosing between what you want now, and what you want MOST.

I love to use my spiral slicer to turn zucchini into angel hair pasta, and serve it with sauce just like spaghetti. Super low calorie! Is there any reason it *has* to be raw? Cooking provides a broader range of possibilities and flavors, even within the vegetables you're already eating raw.

sugar snap peas and snow peas are my favorites along with mini bell peppers. I like to dip them in hummus :)

really you could eat just about any veggie raw, except for the starchy ones like potatoes.. and eggplant which needs to be cooked (but technically it is not a veggie it is a berry!) jicama is nice - very mild tasting and crisp, plain or with a dip, or simply sprinkled with a little chili powder and a squeeze of lime http://kitchen-parade-veggieventure.blogspot.ca/2011/05/what-is-jicama.html

I like raw mushroom, zucchini, cherry tomatoes, broccoli, and cauliflower. Dip them in greek yoghurt tzatziki...mmmmm.

Hi, I want to increase raw veggies in my diet. I was eating baby carrots every day as a snack...and now I am really sick of them. I tried a Red Bell Pepper today and I enjoyed that. Does anyone know of any other Raw Veggies I can try so I can vary it up?
