i love broccoli, cucumbers, mushrooms, and those mini sweet peppers. some times i make a dip using natural fatfree greek yogurt, diced cucumber and onions, and season with salt, pepper and garlic powder. a whole single serving container of yogurt only contains 100 calories, plus protein and calcium, so its actually good for you if you eat all of the dip with veggies for a mini meal.

Go out to the garden and pick some Leaf and Romaine lettuce, Spinach, Radish, Peas, and yes some carrot. On your way past the flower bed, grab a couple of Day Lilly flowers.

Chop, and bowl, to your liking. Grab some of the Walnuts/Pecans in the frig/freeze, sprinkle a little cheese, prepare a vinaigrette. Dried Cranberries are a nice touch.

There is no bad food, only bad cooks.

check out the recipes for kale chips on sparksrecipes. my son really loves them. my daughter (who insists that she is allergic to all vegetables) even said they aren't as bad as she thought they would be. i made them to go with dinner the other day and she actually ate some.

I love raw cucumbers, any salad mixes, and cherry tomatoes when they are in season. Also try a little of the laughing cow swiss cheese on your bell pepper strips, really yummy. emoticon

I would also throw in turnips, rutabaga, and kohlrabi along with everything listed below. I also dip mine in nut butters.

Thank you everyone for your helpful answers! The reason I ask for Raw Veg is because I want to bring them to work to snack on...and Raw would be easiest to prep - no cooking involved! I do eat cooked veg at dinner. Keep the suggestions coming!

Raw veggies that I like to eat include celery, broccoli, cauliflower, sweet peppers, cucumbers, and tomatoes. It's good with hummus, some low fat ranch dressing, and the cucumbers and tomatoes are good with a balsamic dressing or vinegar.

I have been buying cauliflower, broccoli, celery, carrots, etc., and putting them in a "buffet" on the table while I cook dinner, so if anyone wants to snack, they are available.

Discipline is just choosing between what you want now, and what you want MOST.

I love to use my spiral slicer to turn zucchini into angel hair pasta, and serve it with sauce just like spaghetti. Super low calorie!

Is there any reason it *has* to be raw? Cooking provides a broader range of possibilities and flavors, even within the vegetables you're already eating raw.

really you could eat just about any veggie raw, except for the starchy ones like potatoes.. and eggplant which needs to be cooked (but technically it is not a veggie it is a berry!)

jicama is nice - very mild tasting and crisp, plain or with a dip, or simply sprinkled with a little chili powder and a squeeze of lime

I like raw mushroom, zucchini, cherry tomatoes, broccoli, and cauliflower. Dip them in greek yoghurt tzatziki...mmmmm.

Hi, I want to increase raw veggies in my diet. I was eating baby carrots every day as a snack...and now I am really sick of them. I tried a Red Bell Pepper today and I enjoyed that. Does anyone know of any other Raw Veggies I can try so I can vary it up?
