a 2 egg omelette. Use butter to up the calories, and just whip some vegetables into 2 whole eggs, then pour in pan and cook. Quick, and not chewy, while being high calorie. I like mushrooms, and with a pat of butter, we are talking about 275 calories average.
I had bell peppers today. 1/4 cup of red, yellow, and orange mixed. Of course, I eat 4-5 eggs , but the idea is the same.
