I take it you have loads of room in your freezer?
Here is what I do.
Make an Apricot/Chicken Casserole. I use heaps of lentils, finely chopped carrot, celery, onion, red and green bell peppers, and chop up some dried apricots. I use the baking ones for the flavour, but they break down, so I also use the dried dessert ones because they stay in pieces. It is yummy had with mashed potato, broccoli, cauliflower etc, and it also really nice with rice.
Make a tomato based casserole. Some I do with a hint of chilli and some I do with a wee bit of dried sweet basil. Great with rice or pasta.
Try a Chick Pea and chicken curry.
Turn some into ground chicken and make some meat balls/patties. If you do the patties large enough to cover a slice of bread you have a fantastic 'main' for a healthy sandwich just by adding some salad and cottage cheese. You can make them from frozen and let them thaw during the day for when you are ready to eat them. They are also great as the meat part of your main hot meal - very easily zapped while veges are cooking.
Have some frozen as pieces for baking ( frying using oil spray) coated in fine breadcrumbs and lemon pepper or Oat bran and Lemon Pepper.
Make some stir fries using lemon pepper as the main flavour base rather than the usual type.
They all freeze well, and if you do them in individual serve portions you will have a huge variety to choose from.
