I lover Coursera. I'm in the last week of a six week nutrition class. and on the second week of an exercise physiology class and a Nutrition and Physical Activity for Health class.
You can take the courses form the beginning and take all the quizzes and things or you can sign up at any time during the six weeks and just use the materials.
I also highly recommend that you look at the discussion boards for the classes. It seems that discussion nutrition is sort of like discussing religion or politics, people are VERY opinionated. Some of them are even knowledgeable!
They have lots of non-health topics as well (I'll probably do a refresher in biostats, for example).
Free education is good stuff.!
