1/2 a cup is generally considered a serving of veggies, I think. As for vegetable soup, you'd have to figure out the serving size. Let's say you make a batch. Enter all the ingredients into the recipe calculator. Then, mesaure the whole batch. If there's 2 cups, you could make a serving size 1 cup or 1/2 cup for purposes of tracking.
