To die for sweet potato "fries:
1 large sweet potato cut into fry shaped strips (leave the skin on!)
place the sweet potato pieces in a bowl and drizzle 1/2T of olive oil
fluff up the potatoes so that they are evenly coated by the oil
add a hearty shake of ground coriander (most essential part!)
and some cayenne for heat (use as much as you like.) Toss until the
pieces are evenly coated with spices and then place on a baking tray.
Bake at 425 for 30 minutes, turning the fries once 1/2 way through.
The above recipe is for one portion.
Enjoy! They seem so naughty but the calorie count is low and the vitamins are high!
