I made one of my favorites last night and thought that I would share it with you.
Beans, both canned or from bulk are a staple for me..also brown rice....
I took the tops off of green peppers, stuffed them with (canned) black beans, brown rice and chopped onion...Then I simmered them in stewed tomatoes for about three quarters of an hour....Filling, delicious and good for lunch the next day too.
