Are you tracking your food? Look back at your trackers, and see what you're eating on those days. I'm betting the culprit here is the kinds of foods you eat. I've found that when I eat a lot of bread or pasta, I'm hungrier sooner, and more likely to overeat because I'm not getting enough protein. If I eat too much protein, I'm too full to eat other things!
If you'll consider sharing your trackers, we can take a look and see if we can figure out if that's what's keeping you so inconsistent!
