Oh, almost forgot my all time FAVOURITE salad. I ate this for lunch nearly every day when I vacationed in Italy several years ago.
Start with slices of Buffalo Mozzarella, then top each slice with a really good tomato slice, then top each with a basil leaf or two, and then season with a little salt and a drizzle of olive oil. Some people also like to drizzle a balsamic reduction over it.
It is SUPERB!
FYI...the key to this tasting excellent vs. just "good", is in the buffalo mozzarella and those tomatoes! Italy has amazing tomatoes...and naturally, a good quality olive oil doesn't hurt, either.
