Yams have a brown or black skin. Sweet potatoes have an orange or reddish skin. What you commonly see in the US in the grocery stores, are indeed sweet potatoes and not yams. There are differences in the color of the skin and flesh, depending on the particular variety of sweet potato. I don't know if those color variations-- pale orange vs. a darker, richer orange-- make for differences in the vitamin content but I think you could google it and see.
