The one I used is one of those tiny little bottles from McCormick, so I think it's oil based. Heck, even if it's only 20 calories, I'll take it! It completely enhances the flavour with such a tiny amount. I also bought one in Spearmint, so I'll experiment with that a bit. Now I'm thinking of all of the other extracts I can experiment with...almond, vanilla, butter, rum, etc,...there are endless possibilities! I'm so excited!
I remember when I was little, my mom would use some extract to entice us to our breakfast meals...seems like it was used on our cream of wheat maybe? Too many years ago to remember.
