I do mine in the dehydrator. i will soak my nuts over night then add grade b maple syrup or raw honey to a bowl and a variety of different spices. Lay them out on the tray and dehydrate for several hours. They turn out yummy.

I had a snack last night that was really delicious, along similar lines. I put half a teaspoon of sunflower oil into a non-stick pan, added 10 almonds and 10 grams of pumpkin seeds, 1 teaspoon of xylitol and a generous shake of cinnamon. Fried everything for about 10 minutes at a fairly low heat, stirring regularly. I think I could probably have added the xylitol and cinnamon at the end - will do that next time as it was so good there will definitely be a next time. I love walnuts, too, and I think your plan for them will be delicious.

Has anyone tried making a healthier candied nut for salads? I was wondering how it would work to take plain walnuts, spritz them with EVOO, sprinkle with brown Splenda, and roast for a bit in the oven. Anyone tried anything similar to this? Thanks.
