I recently read an article at the chiropractor 's office about how wheat has been genetically altered 32 times!!!!!!!!!! That is reason that people are becoming so sensitive to it. The body doesn't really know how to digest it and some people have more sensitive digestive systems.
Something worth thinking about.

I've found Dr. Davis's Wheat Belly, a helpful sight for eating gluten/wheat free. He is often posting recipes, and healthy eating ideas.

I have a daughter with wheat allergy. She finds using Mom's Place Gluten free products a good way to work with her allergy. We also use Udi's bagels and some of Ian's products make eating at school bearable. There are books out that will tell you which flours and starches are best used in which ways. That can be helpful as no one item can fully replace wheat flour. She also likes using Ener G brand Tapioca Bread. Some stores have a hard time keeping it on the shelf. Hope this makes it easier. Also Newman's Own products have some good gf products. It's owned by Paul Newman and his daughter which has organic products. We've had good luck with them too.

I recently had to cut out all grains that contain gluten - doctor's orders. I agree with a previous poster... it can be difficult to eat out when you're trying to avoid gluten. However, a lot of restaurants are becoming more savvy about food intolerances these days, and many offer gluten-free menus. As far as the gluten-free flour blends go... I am not a fan of the bean flours. I bought several different kinds of gf flours (Bob's Red Mill does have the best variety) and have experimented with different recipes.

I try to eat gluten free when I can. It's actually really easy just substitute vegetables and fruit for breads and pastas. Eating out can be a challenge, but I don't eat out much. Homemade food tastes better!

I substitute vegetables like roasted carrots and sweet potatoes for breads with meals. I eat pasta sauce with meatballs and a salad and skip the noodles. I substitute ground sunflower seeds for breadcrumbs in meat dishes like salmon patties.

There are so many GF blogs on the net with great ideas. Good luck.

The other poster is quite correct.
There is a lot of information out there.

For variety, and possibly lower cost, there are also "recipes" for flour mix/substitutes, so you don't have to stick with a pre-packaged one.

I've been learning a lot about it recently, as well. My hubby is going to school with someone who has to eat gluten free, and he is considering the wisdom of us heading in that direction, too. I'd definitely have to find a way to make gf bread for him; because that's one thing that seems to be a large part of his menu. We do eat differently (I don't eat as much bread and flour-based products, as a choice, but I do find I feel healthier when I don't consume it).

I'm a wash with Gluten Free :) LOL Sometimes I am, Sometimes I'm not. Just depends on the recipe of the day I suppose. I eat "Clean" - so nothing processed, and sometimes that happens to mean gluten free :) (Perfect example would be my gluten free breakfast this am - Baked Blueberry French Toast - YUMM!)

Theres a great deal out there as far as recipes go. You can look to sites like TheGraciousPantry.Com - she's a clean eater but also offers up a lot of gluten free alternatives... as does EatingRules.Com and 100daysofrealfood.com :)

I think when going Gluten Free, Clean, Vegan, Paleo - any extreme health diet the adjustment can be hard at first, but you'd be amazed and just how tasty things really can be :)

I will also say - I can relate to feeling better! Since going clean and quasi gluten free, my insomnia is gone, my energy levels are up, headaches and colds are less frequent... I would say after about 2 weeks? I really noticed a difference in the way I felt.

- Also if you do go 100% gluten free, Bobs Red Mill makes a great deal of Gluten Free products and mixes like Brownie & Muffin mix, Almond Flour, Quinoa Flour... theres Ezekial Bread (found in freezer section under organics) that despite what you may hear is absolutely delicious and its gluten free.

anyone here that eats gluten free?? yes i am finding my chronic headaches, has a lot to do with my diet.. healthier i eat the less headaches..
any comments, suggestions would be greatly appreciated.. thanks
