I'm a wash with Gluten Free :) LOL Sometimes I am, Sometimes I'm not. Just depends on the recipe of the day I suppose. I eat "Clean" - so nothing processed, and sometimes that happens to mean gluten free :) (Perfect example would be my gluten free breakfast this am - Baked Blueberry French Toast - YUMM!)
Theres a great deal out there as far as recipes go. You can look to sites like TheGraciousPantry.Com - she's a clean eater but also offers up a lot of gluten free alternatives... as does EatingRules.Com and 100daysofrealfood.com :)
I think when going Gluten Free, Clean, Vegan, Paleo - any extreme health diet the adjustment can be hard at first, but you'd be amazed and just how tasty things really can be :)
I will also say - I can relate to feeling better! Since going clean and quasi gluten free, my insomnia is gone, my energy levels are up, headaches and colds are less frequent... I would say after about 2 weeks? I really noticed a difference in the way I felt.
- Also if you do go 100% gluten free, Bobs Red Mill makes a great deal of Gluten Free products and mixes like Brownie & Muffin mix, Almond Flour, Quinoa Flour... theres Ezekial Bread (found in freezer section under organics) that despite what you may hear is absolutely delicious and its gluten free.
