Meat is so expensive where we live so we have started cutting some out and eating less of it and I have noticed our food bill has gone down somewhat
We have cottage baked potatoes: reg or red potato large baked in micro, topped with cottage cheese and microwaved steamed veggies on the side..this is my go to when I am in a hurry We always have beans and rice on hand and make veggie oat burgers with them (very filling) or a quick bean and rice soup, think taco soup style just add tomato juice as a base for soup also stir fry with brown rice is awesome because you can load up on vegetables with a little lean protien and you can cook the rice and cut up veggies ahead of time to use through the week We also bake a whole chicken (cheap) sometimes and use it through the week on salads with quinoa or chicken tacos, healthy casseroles and well soups....we eat a lot of soup :)...its quick

Hi, I know theres quite a bit of information out there about breakfast or lunch made healthy and fast but as I work nights and prefer having "dinner" type foods before work they dont tend to help very much. My work is very physically active (stocking) so something hearty is definitely a plus. I was wondering if anyone had any tips for quick, heathy, and affordable dinners.
