I love using chia seeds and have also noticed they leave me feeling full, a huge bonus to all the health benefits. I haven't tried mixing with water and leaving until it gels to go in a smoothie, will have to try that. Have you tried making chia seed jam? Very easy to make (here's one from the 'afterdinner.com' website - adapted from The Gracious Pantry):
1.5 cups frozen raspberries
3 tbsp chia seeds
2 tbsp honey (I substituted xylitol for honey)
3 tbsp water
Microwave the raspberries in a small bowl for 2-3 minutes (I heated mine in a pan on the stove), then crush them with a fork.
Add the chia seeds, honey and water and stir to combine.
Pour the mixture into a jar, put the lid on, and refrigerate for at least an hour.
This will last about a week in the fridge. I have frozen portions in an ice cube tray, too.
