I know I am a little late on the post but I agree with a lot of the other users about having a shake/smoothie in the morning. It is really quick but gets substance in you. I like the visalus shake. It is tastey, with many different recipes you can use with it. I know a few other people mentioned them already. It will keep you full (my link is below if interested). If i dont do a shake I do a greek yogurt. I am also known for oatmeal. You can also add a scoop of protein powder or visalus to it to make it even more filling. For snacks almonds, raisins, apples, grapes, carrots and pears are easy. Also bars- like fiber one are good. Read the label in go for lower sugar/ higher fiber options. They have peanut butter packs for on the go or you can just put your own in a container and dip your apple pieces, pear pieces or carrots in. Mini fridge ideas are applesauce, sugar free jello or sugar free pudding cups, Greek yogurt, I like healthy choice frozen meals, if you get a chance to sit down cans of soup are easy, fast and tastey too.

So many people have given great ideas and tips for making and finding healthy, fast breakfast/lunch options. I just want to say thank you to everyone that has posted here and that I really appreciate your help. It has almost been five weeks now since I have gone back to work and juggling work and home life has been challenging; so all of these great options have kept me going in the right direction.

It is amazing how many great choices there are and really it is all about making healthy choices everyday. Thanks again for all your help!

Wraps! On Sundays I like to cook a batch of brown rice and add beans (I prefer Navy beans or red kidney beans), then put a few spoonfuls on a whole grain wrap with spinach leaves, a drizzle of taco sauce, and sometimes a little cheese (depends on if I'm doing dairy that day), roll it up in tin foil and pop it back into the fridge until morning.

I also like to cut medium cocktail shrimp in half, spread the wrap with an ounce of cream cheese, place a base layer of spinach leaves, and then layer shrimp and cucumber slices together.

I pre make dipping sauce (mine peanut butter, light soy sauce, rice vinegar with tad of fish sauce and molasses) and it keeps for a long time in the frig)

Left over salad gets rolled up in the wrapper for a super quick on the go snack the next day. I also love fruit in these wrappers - my fav is mango, lowfat ricotta, and wild greens.

Cooler or thermal bag is a great idea.

Pre packaged is great for portion control if you have the money. If not, spend a Saturday pre packaging your foods.

Breakfast:
We make sausage egg burritos and freeze. He just zaps in the morning. These really stick with him.
Cook turkey breakfast sausage, mix in eggs or egg whites along with jalapeños. Stir in cheese. Wrap in low carb tortillas.

Here are things I pack for my husband.

I always combine a protein, veggie, fruit and carb for him. He is a diabetic and the protein keeps his sugar level...the veggie fills him up and the fruit helps him not cheat on candy.

Snacks:
Individual cream cheese, wheat thins, mini carrots, blueberries

Individual hummus (Costco), pita chips, raw broccoli, blackberries

Apple, peanut butter (Jiff to Go), cauliflower, kelloggs fiber bar

Goldfish crackers, peanut butter, cucumbers, strawberries

Bean dip, multigrain chips, fresh salsa, pear

Wholly guacamole ind packets, multigrain chips, string cheese, orange

Lunch:
Salad
Fruit
Sandwich...low carb bread PBJ
Everything bagel thins with turkey, ham or pastrami
Cinnamon Raisin bagel thin with cream cheese
(microwave) bagel thin with American and cream cheese
(microwave) organic bean cheese burrito (Costco)

I have a low carb, low fat muffin that I make. Here's the basic recipe, but I usually add cheese or chocolate protein powder to make it taste better...

In a 1 cup bowl:

- 1 egg
- 2 tablespoons of whole wheat flour( I often substitute with other multigrain flour)
- 1/4 teaspoon of baking powder

optional:
- pinch of salt
- flax or olive oil
- 1 slice of nf cheese or 1-tablespoons of chocolate protein power.

Mix thoroughly, then microwave for about 1 minute:

warning: the moisture content isok for the first 30-60minutes, but this muffin can be too dry if you wait too long to eat it. If you have any advice on the moisture, please share.

For snacks, Fiber One bars have been an excellent option. They keep you full and are delicious too! Also, Quaker has a new set of snack bars~ banana nut and cinnamon pecan. Those are also really tasty.

Smoothies can be a good thing--or a bad thing. Check for caloric content, as well as making certain there's nothing in it that is going to cause problems with any medications or medical conditions you may have... better safe than sorry!

My favorite quick and easy breakfast is an apple or some grapes, 1 to 2 oz. of lowfat cheese, and a serving of Special K crackers. Sometimes change out the cheese for a boiled egg or have the egg and cheese without the crackers.You can even eat this one in the car if you are in a rush.

My favorite go-to fast food breakfast...McDonald's oatmeal without the added brown sugar or their new fruit and nut salad.

I make a big batch of the recipe for Oatmeal and package them into 4.5 oz containers.

What is the Voluminous Oatmeal Trick?

The idea is to add 1 and 1/2 times the recommended liquid to the oats, prior to cooking. Then you can either microwave or cook on the stovetop, but stop before all the water is absorbed. Come back the next day (or a few hours later), and all the liquid has been absorbed, leaving you with pillow-soft oats that are double the size of regular oats! (Side note: As another “voluminous” trick, click for the High-Protein Oats Trick.)

Step One: Measure out one serving of dry oats (40g). I also add 1/4 tsp salt.

Step Two: Add a little over 1 1/2 cups liquid (I add 400g).

Step Three: Microwave or cook on the stove, but stop before all the water is absorbed. (I microwave for 4 1/2 minutes, then leave in the closed microwave for 5 more minutes.)

Step Four: Put in the fridge, uncovered. When you return the next day (or a few hours later), the watery mess above will have magically turned into 2 cups-worth of pillowy, voluminous oats! Now, I am strange and like my oatmeal cold (like pudding!). But if you want it hot, you can still re-heat the next day. Re-heat it just until it gets hot, no longer, and the volume will stay.

Oatmeal on Steroids!

You can make up little baggies over the weekend. I put in 3/4 cup of Gluten Free Koala Crisp Cereal, 12 raw almonds, 2 tbsp of raw sunflower seeds, and (optional)16 semi sweet chocolate chips. :-) I use 1/2 of unsweetened vanilla almond milk. You can buy small containers of almond milk. Maybe not completely healthy, but its very yummy!

1) egg beater microwave omelette: I pour 1/2 cup egg beaters into a cup or bowl with whatever veggies I have on hand (onion, pepper, mushroom, leftover vegs from dinner, tomato etc). Nuke for a minute, stir, nuke a bit longer. Add low fat or fat free cheese and nuke about 30 sec. longer. If this is not enough food for you, you could put it in a low carb tortilla, or on a bagel thin or light english muffin.

2) bierhermuesli: 1/3 cup old fashioned oatmeal with enough water to cover it, mix in a bowl and place in frig overnight. In morning add fruit and greek yogurt.

If I start my day with this protein shake, I usually always can get enough protein & calcium for the day - 1 scoop Jillian Michaels protein powder (chocolate) plus 8 oz. fat free milk plus extra calcium (Shamrock Farms). They sell the Jillian Michaels protein powder at WalMart. I usually drink 2 percent milk, but with this shake I can use the fat free plus extra calcium and it tastes fine. That plus my regular multivitamin gets my day off to a strong start.

Never confuse a single defeat with a final defeat.

For those times when you have to eat out, I found the book "Eat This Not That" helpful. It gave me options at many of the restaurants that I have to go to for work or to celebrate with friends or whatever so I can eat out without feeling like I blew it all. And sometimes the choices surprised me but they put in there their reasoning behind the choice and it has helped me learn.

For breakfast, I have a juicer so if I know I will be rushed the next day I make a juice with a lot of fruits and vegetables the night before and put it in the fridge. Then in the morning I will take my juice in my cup that goes everywhere with me.

I also like to make my own jerky with my dehydrator. That has become a great snack because with my increased workout schedule (I started p90x three weeks ago) I need more protein.

I have also made my protein shake with two services of protein instead of one on the days that I am using it to replace breakfast. With that I am usually good until 10am (when I usually have a snack).

I rarerly feel hungry in the morning, but I know I need to eat. I have read many articles that starting your day with protein really starts your metabolism furnace going!

I use the brand EAS protein shake, come in chocolate and vaniall, I get the carb control, it has 0 sugars, 4 carbs 17 grams of protein and 110 calories and I think 2 grams fiber. Tastes pretty good-better than slimfast or something. I also sometimes grab a piece of fruit or a light string cheese. Sometimes I grab a 90 calories fiber one chocolate chip bar with my shake.


You can buy the EAS shakes at Walgreens (in the diet section) I buy mine at Meijer's and I have seen them at Walmart in the diet/vitamin section. they are premixed and ready to drink.

This is a fast breakfast, filling, very nutritious (the shake has lots of vitamins and minerals) and I can even take it in the car on the go.

Blender Breakfast: 4oz. ice, 4oz cold water, 1/4C. Blueberries + Strawberry, puree, then add UltraMeal Plus 360. Sometimes I buy egg whites and add 1T.

Fage 0% Greek Yogurt with Berries and 1t. Slivered Almonds

Apple, Hardboiled Egg, 1 Slice Ezekiel Toast w/1T. Simply Jif

Lunch:
Baby Spinach, Sliced Mushroom, 3oz. Can Tuna w/oil drained, add 2T. Pomegrante seeds
(you can add beans in place of tuna)

1C. Lentil Soup + Ezekiel Bread with Avocado and 2oz. Turkey or Chicken

Pita, 3oz Chicken Breast, Trader Joe's Tzatziki Sauce, Sliced Tomato, Sliced Red Onion, Chopped Hearts of Romaine.

great breakfast or lunch:
Veggie burger or black bean burger (I prefer Morning Star brand) on a Flatout wrap (light variety, any flavor) w/ ff or reduced fat cheese. Very tasty and satisfying.

re: coffee--make your own iced coffee w/ a delish flavored brew (you can make it the night before and chill it overnight). I add Stevia for sweetness. Lots of ice. Some fat free half-n-half. a little cinnamon? or if you like other flavors, experiment w/ flavored extracts. You'd be amazed what a few drops of coconut extract will do for recipes!! It's hard to beat a frappucino--oh, don't I know it--but most days, I'm not willing to give up that many calories for a drink. See if you can satisfy your craving w/ a close substitute that's a healthier option. Or get your exercise in there, and then enjoy a smaller sized frap!!! ;-)

Breakfast = a fruit/skim milk/protein powder smoothie plus a mini bagel. I take this in the car for my very long morning commute.

Lunch = When I make dinner, I cook extra. Then I portion out some for lunches into pyrex dishes and stack them in the freezer. New ones go on the bottom. Each morning I grab a mystery meal from the top of the stack. If I am going to work late, I'll grab two so I can have a healthy dinner at work, too.

Having cut way down on bread and dairy, I really had to change my breakfast and lunch choices. My "go to" breakfast: celery sticks with peanut butter and a half a grapefruit. It surprises me how it really stays with me until lunch. I usually make a large salad every few days. Salad is my fast food lunch. I add wasa crackers with tuna or whatever is healthy in the fridge.

Oldfashioned oatmeal microwaved in the morning using Unsweetened Almond Breeze and a tablespoon of peanut butter and chocolate chips gives me a good start and quietens my sweet tooth for the day. The taste reminds me a little of the on top of the stove cookies I use to make.

I sometimes batch cook on the weekend, so I have meals prepared to just grab and go. I'll make steel cut oats for multiple days and divide it up to microwave and run. Breakfast burritos can be made and frozen. I'll prepare multiple salads at one time to only need to do the chopping once. (Measure and store dressing separately so it doesn't wilt the greens.) I'll grill a bunch of chicken at one time and use in salads, sandwiches, etc... whenever I need. I like to put all of the ingredients for a crockpot dinner into a freezer bag and pull one out of the freezer to thaw the night before to throw into the crockpot in the morning before work. (May be partially frozen still, but it's fine) And the best thing I do is meal planning for the entire week, making my list, and grocery shopping only once.

Smoothies made in the blender at home are a quick breakfast. It takes about 1 cup of fruit juice, one serving yogurt, and any kind of fruit you want! I usually have about 3 kinds of fruit in one container! Add ice if you want it more cold than refrigerator temperature.
Makes 2-3 servings.

Lunches- I always have chopped "israeli" salad in the fridge. I also have 4 oz frozen portions of chicken in the freezer. I am able to throw together a quick salad in no time. I also have packs of frozen vegetables I throw together with the chicken or a can of tuna or salmon for a quick lunch.

or
4 egg white fritatta with "spicy"cauliflower, onion, roasted red pepper and cheddar cheese on days I have more time

Both keep me satisfied with plenty of protein.

I usually have some cereal, low fat milk and a banana for breakfast-but of course, can't run out of the house with it!

For a hot on the go breakfast, I throw a wrap or chapatti in a non stick pan, crack an egg onto the wrap season it then flip! Once the egg is cooked, remove from the pan and fold in half, so it resembles a calzone, egg facing inwards. Wrap it up in a piece of paper towel-keeps the food warm and makes for a handy napkin when you're done!

You could fill this with some sliced tomatoes, light cheese, arugula or the like. With this, I grab a piece of fruit and a travel mug of tea. All done and out the door in about ten minutes (come on, we all deserve 10 minutes towards our health each morning!)

If you freeze skim milk into ice cubes and blend them with frozen coffee you can make something approximating a frappichino, however, to really get that sweet, creamy quality you really need to use sweetened condensed milk, and that stuff, even fat-free, packs a whallup calorie-wise. I have seen those flavored syrups in stores though, even the sugar-free versions, so you could play around and find something you like, even if it is not quite the same thing.

Personally, I can't stand coffee (I know, I know, and I live in Starbucks country! LOL) so this is a bit of a challenge--but I have a friend who makes coffee, chills it and makes it into ice cubes, and she uses that fat-free non-dairy creamer in vanilla or almond or flavors... and she whips it up with a little low-fat milk, like a smoothie, in her blender on hot afternoons. I don't even like the smell of coffee and I don't use creamers either, but the vanilla stuff does smell pretty good--and I can't imagine that its as high in calories as the cream etc they use in a latte stand... just a thought.

Protein shake, hard-boiled egg, and a "grab and go" fruit are my "Oh $#!*, the bus will be here in 10 minutes!" default. Easy to shove the fruit and egg in my pack or munch them while on foot.

Everyone has such great ideas. I have been doing really well this week and have tried several of the ideas that have been listed so far. My major difficulty has been finding something to replace the Starbucks Frappuccino that I like to drink in the morning once or twice a week with breakfast or as a snack to cool down in the summers while I am driving some place. I normally drink tea as I am not a coffee drinker but I can't resist Starbucks Frappuccino's which are basically dessert in a cup more than a breakfast drink.

Does anyone have an iced coffee recipe that is like the Starbucks Frappuccino that I could make in the morning but that has fewer calories/fat. I really like the carmel and the vanilla frappuccino. I have tried buying the prepackaged glass bottled light frappuccino's but even these still have 100 calories and if I through some ice into a blender with one of the bottled frappuccino's; it just tasted watered down and is a bit weak as far as the flavor goes. They say that it is not a good idea to drink your calories and I am afraid that the frappuccino adds a lot of calories to my day that I don't need.

I make a cheese danish. You can use a light or mini whole wheat bagel, toasted. Then top it with 2 tbsp 1% cottage cheese. Sprinkle the top with cinnamon and splenda. My daughters love the Arnold wheat thin bread flats toasted with almond butter, honey and sliced apples. These are all quick, easy and yummy.

Every morning I put 1Cup non-fat milk, 2 Tbsp Wheat Germ, 2 scoops protein powder, 2 loose cups spinach,and 1 medium to large frozen banana (already sliced). Whir that around and while its whirring, I throw a homemade muffin into the micro for 25 secondfs. Voila! Breakfast in under two minutes and it kick-starts my day! If the muffin idea doesn't thrill you, throw a slice of really wholesome bread in the toaster and smear 1 tbsp of peanut butter butter on it. And don't let the spinach in the blender throw you either- you can't even taste it and it is packed with nutrition.

Note: READ your labels, folks. Working this hard is easy to sabotage with high fructose corn syrup and sugar alcohols. They are almost EVERYwhere- but not in MY house anymore.

I recently started a 90 day challenge with the Body by ViSalus program. They have great meal-replacement shakes that are super fast to put together; you simply mix or blend milk, water, juice, almond milk, soy milk, or whatever with a couple scoops of the shake mix, and then I like to add things like fresh/frozen fruit, or a tablespoon of peanut butter to give them a bit more substance (and change it up each day); they are super fast, easy and really tasty if you are up for trying them! :)

I can do the oatmeal. Need to stop eating the fried eggs and sausage patties in the morning and skipping lunch. Was eating oatmeal before due to high cholesterol, but stopped. Will starting eating oatmeal again tomorrow.

i have sugar free instant oatmeal everyday, they make different flavors like maple and brown sugar, apple and cinnamon, cinnamon bun.... its ready in 2 min or less depending on your microwave, make it in a lg coffee cup and take it with you anywhere, only 100 calories and 18 carbs, no fat :) i add some splenda for sweetness... another easy fast way is fruit and cheese, i ussually do light string cheese and grapes and apples, also 100 calories total and few carbs . Those are my 2 favorite on the run breakfast ideas :) as far as lunch i like frozen meals i really only make a real meal at night when i have the time, which i usually dont have any time available during the day between work and gym.... snacks are easy as well, i like to have sweet and salty but no chips or cookies, i tend to go for fruit and cheese, fruit and peanut butter sweetened with splenda, fruit and nuts.... the idea for me is they are easy and fullfilling since they have carbs for fuel and protein will help you feel full longer :)

When life give you lemons, make some lemonade... but best use some splenda :)

French Vanilla Iced Coffee
My new iced coffee for anytime!

2 scoops ViSalus *
2/3 cup water.
1 tsp instant coffee granules (heaping is best)
2/3 cup milk ( I use 2% but you can use whatever you like).
1 cup ice.

Add ViSalus and water to a shaker container and shake till powder has no lumps. Add coffee, milk & ice and shake till well blended. Thin with more milk or water if you don't like it real strong. Enjoy! This replaces the high fat iced coffee I used to get buy at McDonalds. It's not exactly the same but it's close enough for me. And it is WAY more healthy! :)

Breakfast Fruit Smoothie:

1 single size container Danon Light & Fit Vanilla yogurt
3/4-1cup of fresh pineapple
1/2 cup frozen raspberries
1/2 cup frozen blueberries
(sometimes I add a fresh kiwi too and a tbsp of ground organic oat bran or flax seed)
a dash of water

My standard breakfast: I measure out roughly 55 to 75 grams frozen chopped spinach,(somewhat less than 1/2 c) and about 25 g frozen diced onions (about 1/8 c) and thaw them in a heated frying pan. Then I toss in 15g (1/2 ounce) of low-fat mozzarella or feta cheese, one egg, seasoned salt, and cayenne, and scramble it all together. Then I dish this out onto a 1/2 cup of microwaved millet, quinoa, or rice if I've got some leftovers or a piece of toast if I don't. All of this adds up to less than 300 calories (depending on the actual combo), is very filling, and super nutritious.

If I'm feeling lazy, or really rushed, I open a can of Wolfgang Puck soup.

As for oatmeal, I actually prefer it as a bedtime snack, but I do find that quick oats are very quick. I mush 1/2 a banana in the pot, add 1/2 c oats and 1/2 c milk and stir at high heat until it thickens... about a minute. Then I throw in frozen berries (usually raspberries), which cool it to an eatable temperature as the berries thaw. Again, very filling and very nutritious, and not too many calories as long as I don't add nuts or nut butter as well, which I sometimes do for a bit of a boost of protein and "good" fats. Sometimes I add vanilla and/or cinnamon as well.

As for snacks, I buy some spelt bread that is a really tiny loaf that I slice really thin -- about half the calories of a usual piece of bread -- and I microwave this so that it's warm. With a single wedge of *low fat* Laughing Cow cheese (check to make sure it's the low-fat version), this adds up to fewer than 100 calories, seems really decadent, and totally satisfies me even though I don't believe in eating processed food... Or sometimes I just have the Laughing Cow cheese with a Ryvita crisp.

But fruit is still my main go-to snack.

Lunches out... can't help you there. I work from home.

Re-sparked October 24, 2011 and determined to make it work this time.

For breakfast or Lunch:

1 can chick peas, rinsed and drained
1 medium onion, chopped fine
1-2 cloves of garlic, minced
1 tomato, chopped
1/2 Hass avocado
salt pepper, to taste

Place a tsp of E olive oil in pan.
Add all ingredients ,except beans and avocado.
Cook until onions are translucent. Add beans. After 3 -4 minutes, add tomato. Stir and serve.

This meal is very filling. If I use it as a breakfast (usually 6am), I wont feel hungry until 2-3 o'clock.

If you stay on the path it will get you where you are going. Choose path wisely.

I have to "go-to" breakfast options that seem to keep me fueled up until lunch!

1. Green Smoothie: 1/2 frozen banana, 2 cups spinach, 1 cup frozen strawberries, 8 oz unsweetened almond milk, tsp honey, tbs chia seeds. (that's the basic you can add apple, peach, pear, blueberries, kale etc). It gives you close to 4 servings of fruits/veggies, it tastes sweet and it's filling all for under 300 calories.

2. Power Oatmeal: 1 packet of plain oatmeal w/ boiling water, 1 tsp honey, 1/2 cup fresh berries, 1 tbsp Hemp Seeds. If you want to kick it up a notch you can add a scoop of vanilla protein powder.

Both of these options take 5 minutes to make and provide lots of nutrients while keeping me full.

My snacks consist of rice cakes w/ either peanut butter or almond butter. Very filling and tasty :)

I cook a batch of steel cut oats in my rice cooker early in the week and reheat it with coconut milk (I think it's by Soy Dream?). I add an unpacked tablespoon of brown sugar, 1/4 cup of Trader Joe's Cinnamon Almonds, and 1/2 of a chopped banana. That keeps me going EASILY until lunch time!

I cook several pounds of salmon each week on the grill and keep the leftovers in the refrig. for breakfast.

3 to 4 oz of salmon, a yogurt, and a couple pieces of fruit and your good to go till lunch. Maybe add an apple around 11 am. The food balance (Carbs/fat/protein is perfect) according to spark people and it generally is about 400 or so calories. It also extremely easy. Open the frig/ziplock baggie and break off a piece and eat. Grab several pieces of fruit and eat them on the ride. Fit the yogurt in wherever

I started this in January and i am down 45 pounds. This seems to power my body real well. Much better than the cereal I used to eat.

Its supper easy and no matter what fruits I eat (I always switch them around for variety) I am also in the recommended spark people nutrition zone.

Your breakfast sounds really good. I am on a switchboard in the morning and we are not allowed to have food. Good and bad. ha ha If I had all those made up ahead of time, I could eat it on the way in! I don't get up early enough to eat, get ready, take care of the dog. My fast breakfast at work is.

Margarine on one side of bread.
Cut centre out with a cup.
Put both peaces marg side down on a sandwich press.
Crack an egg into centre made by cup. Close lid and leave until cooked through.
When done sprinkle with pepper and salt.

Easy to eat at deak as no knife and fork..emoticon

On days when I have work or lectures, I always take 40 grams of quick cook oats, slice an entire apple into this, maybe add a bit of cinnamon. When I get to school or work, I add water and microwave it for 3-4 minutes, and can enjoy my hot breakfast while working. There is no need for sugar, because the apple provides sweetening, and I get fruit and fiber.

I just started eating healthy so I am just learning. But if I am working it is a grapefruit and then breakfast muffin from subway (luckily in the place I work). Or if I am off 2 poached eggs and toast. Lunch is a little different. I find I am looking over everything I eat and just making the better choices. Today was a taco salad with one serving of ground chuck and lots of lettuce. One tomato and then 2 tbs sour cream and taco sauce emoticon

Anything is possible if u want it to happen. Life is too short take care of yourself :D

I personally eat 1/2 c. egg substitute (no fat, no cholesterol) which equivilents to 2 eggs. I put them in a coffee cup or glass measuring cup and then I nuke it in the microwave for 2-3 mins. Then I can grab and go! Usually I eat this with a piece of sourdough toast and maybe some Turkey bacon if I have it.

Other mornings I eat a packet of High Fiber Oatmeal or Fiber One cereal with some sort of fruit--bananas, strawberries, or blueberries typically.

My current go-to breakfast is to pack a greek yogurt (Fage or Wallaby, 0%), a piece of fruit (usually a banana, apple, or bunch of grapes), a beverage (coffee or tea) and a 100 cal snack that includes carb + protein (crackers and string cheese) for later in the morning.

I usually do this Sunday so I have them for the week.
Ingredients:
organic coconut oil (eggs taste SO good cooked in it) but any oil/cooking spray will do.
good eggs
thinly sliced Prosciutto
whole grain English muffins
Parmesan Cheese grated.
It's my gourmet version of egg mcmuffins...
You can omit the egg yolks if you like...
It makes 6 if you use all the muffins in the package,
fry the eggs, sprinkle on a bit of cheese, cook the prosciutto (I like it kind of crispy)
toast the muffins, assemble it all. Then I individually bag them, and then bag them all again in a freezer bag to keep them from freezer burn. (if you wanted to get crazy, you could add fresh chopped spinach to the egg/egg whites! (Wrap the "McMuffin in a paper towel when you microwave it, it tends to get a bit soggy otherwise)

If you are like my Boyfriend who hates to eat eggs everyday, you can alternate by making PB and J on a good whole grain bread, wrapping and freezing those as well, you would NEVER know they were frozen. Add a Greek yogurt and fruit and you have a nice start to the day!

Have you tried the Amy's frozen entrees? They make a great lunch. They are all vegetarian, but high in protein and fiber and low in calories. They are very filling and stay with you for a while because of the fiber.

My favorite quick and yummy breakfast is Mrs Thomas Lite Multigrain muffin, (8 gms of fiber), toasted w/light cream cheese and jelly -- or peanut butter and jelly, a little on each half.

For me, in order to keep things quick in the morning, I have to do work in advance -- which includes planning, shopping, and prepping.

Each week I get better at it, but I try to go shopping with a defined list and a plan -- so I am buying things that I can make meals out of and can spend my money wisely. Then, I spend a an hour or so on Sunday afternoon doing prep work -- like cutting up vegetables, splitting up crackers into serving size bags, etc.

So, when I pack lunches during the week, I can grab a bag of crackers from my pantry, a bag of mixed vegetables from the refrigerator, etc.

For breakfast, I typically eat yogurt -- sometimes with fruit & sometimes with cereal. Those things are super quick to grab during the week.

I don't know if these would be fast enough for you - but here's what I do for breakfasts and lunches:

NIGHT:
Before I go to sleep, I lightly fry two eggs and hardboil another. I put out two containers and fill one with salad, edamame soy beans, shredded carrots, and alfalfa sprouts, and then I fill the other container with pita bread and spinach leaves. When my eggs are done cooking, I put the fried ones on top of my pita and the de-shelled hardboiled one on my salad without even cutting it up. I put the tops on them and pop them in the fridge.

MORNING:
I put hot sauce on my breakfast egg/spinach/pita sandwich and I get out a really small container where I put my salad dressing and a sprinkling of parmesan cheese. Then I put them on the counter top and get out a container of greek yogurt and a Larabar for the afternoon munchies. I stack it all on top of itself and then put it in a bag and go.

Then, throughout the day, my meals look like this:

9 am - Breakfast egg/spinach/pita with hot sauce
1 pm - Big salad with egg, edamame, alfalfa, carrots and dressing
4 pm - Larabar
and then whenever the mood strikes me throughout the day - my greek yogurt.

This is what I found that works for me. I hope it helps in some way!

I have found nothing I like better, and has better numbers, than 1/2 cup of Manwhich/extra lean ground turkey on one of those new Flatouts! Delicious, easy, and has only 216 calories while building you up with 28 grams of protein.

The scale doesn't have a chance, it's goin' down!

A fast and easy breakfast around here, my daughter loves is

1 Whole banana
1 Regular size flour tortilla
2 tablespoons of peanut butter

Spread peanut butter around on the tortilla, place banana down, roll up.
Tada - one awesome easy to travel with breakfast wrap.

Warm Cereal Bowl:
¾ c Whole Grain Cream of Wheat
2 Tbsp dried fruit (Raisins, berries, apricots)
1 tbsp. Almonds
¼ c almond, rice or soy milk
1 Scoop Protein Powder


½ Whole Wheat Bagel
1 Tbsp. Whipped Cream Cheese
2 oz. Smoked Salmon
2 Slices Tomato
½ Large Grapefruit

Peanut Butter Toast:
1 Slice Whole-Grain Toast

My current favorite breakfast is super-quick -- a whole wheat English muffin (untoasted), with low-fat whipped cream cheese and blueberries. It's filling and so delicious! I usually have a cup of green tea with it, and I bring a hard-boiled egg three or four days a week so I can get in some protein.

I love making different wraps for lunch -- the one I brought today is so good: roasted garlic hummus, with a slice of turkey, salsa, a handful of baby spinach, and a small handful of shredded cheese.

I bring a banana and a Light 'n Fit yogurt for snack every day.

Great ideas here, can you give some more breakfast options that don't include eggs, I don't eat them and struggle to get enough protein without the extra fat.

I like the one minute flax muffin in the spark recipe. It is high protein so it holds me till lunch, high fiber, low carbs. I do add 1.2 t of chopped pecans and 1/2t of mini chocolate chips. Together they add about 8 carbs to this low carb breakfast.

Shopping tips for healthy on the go: If I find myself in a gas station for example, I stick to nuts, beef jerkey occasionally, Cheese crackers, low-fat milk and bottled water. If I have a headache from driving all day, I might get a Coke Zero for the caffeine. Taco Bell has the Fresco option on their tacos.
McDs has Iced tea that tastes good without sugar. Fruit and yogurt parfait, salads, and snack wraps that satisfy the craving for a Big Mac.
