What a great thread! I never have any issues getting my fruits and veggies in, but I also love my salads. My snacks are usually a piece of fruit or a handful of veggies and lately I have been experimenting with trying new foods. Next time you are in the produce section, take a good look around and grab. You can always dip apples in peanut butter, dip veggies in hummus dip and all sorts of things like that.

You should try to eat 2 servings at every meal and not wait until dinner to eat them all. It really isn't hard. Put spinach leaves, tomatoes and pickles on your sandwiches. Slice bananas and strawberries over your cereal. Mix pasta with a broccoli, zucchini and onions and call it pasta salad. Use grapes and baby carrots to snack on in front of the TV. Eat fruit in season to save money. Apples are cheap at this time of year. Drizzle honey over them or put them in yogurt if you get tired of them plain. Im sure you get the idea.

I love making fruit smoothies and one of my favorite snacks is apple slices dipped in low fat yogurt. I also try to eat a banana with my cereal in the morning or some grapes or an orange for a midday snack. You can also try adding fresh fruit to your salads for a sweet twist on a classic favorite.

As for veggies, try sauteing up some broccoli with minced garlic and putting it overtop of rice for a quick meal. Stir fries are also a delicious way to get in a serving. I enjoy dipping carrot sticks into hummus for a snack and also like peanut butter and raisins on celery stalks.

My friend gave me a good idea. Her family does not like veggies so she threw some in a blender and added them to her lasagne. Her family did not even notice them. She does the same with her meatloaf.

veggies:
-saute string green beans in olive oil and garlic
-vegetable soups
-veggie wraps with whole wheat tortillas and hummus
-roasted vegetables like sweet and regular potatoes, onions, squash, zucchini, mushroom, etc.
-dip carrot and celery sticks in low-fat ranch
-make veggie pizzas on whole wheat crust at home!
-oven roast tomatoes. they're delicious!

fruit:
-100% fruit juices
-make granola with dried fruit
-dip apple slices in peanut butter and bananas and strawberries in dark chocolate
-smoothies

I make stews and soups with pureed vegetables. Carrots and cauliflower are lovely. Also, pureed beans thicken soup well and give it a nice creamy texture.
