The Moosewood cookbooks are vegatarian, but they have a lot of good vegan recipes. World Vegetarian is one of my favorite vegetarian cookbooks.

I went vegetarian/almost vegan (I almost dont eat eggs/egg-based products, just once in a while, and the only milk product I eat is cottage cheese) due to health concerns, and it turns out I magically began losing weight.

Obviously you cannot be a vegan like a friend of mine, who basically eats french fries and soyburgers (wonder why he is more than 300lbs..) - but, with the correct intake of proteins, carbs and fats, a vegetarian diet will certainly improve your health and weight.

My husband & I started a plant based diet this week. He read the book "The China Study" and decided this was the best decision for his health. I being the supportive wife am joining him. We are very excited and our 1st week has been good. We both feel better. We had been on Weight Watchers at home since April. This summer when farm fresh produce was plentiful there were many days we ate only fruits and vegetables. We have learned many ways of cooking light. Today we tried tofu for the first time and it was good. We both are committed to trying this. We may end up eating fish or chicken from time to time but not on a regular basis and not for a while. Stay true to your goals!

I have ready the "Skinny" books and they have awsome recipe. I am not vegan or vegetarian but I like to try and have a couple days a week with Veggie meals. I do admit I feel so much better on these days and my body would probably respond well. Also lots of great recipies online.... emoticon

You may want to join a vegetarian SP team. The transition may be easier if you start with a vegetarian diet that includes eggs and dairy. Then as you become more educated you can move towards the more strict vegan lifestyle.
Check out some of the vegetarian recipes here at SP and also go to your local library which will be a great resource for information, cookbooks and cooking magazines.
Also skinny b_tch is NOT the most accurate and reliable with much of the information contained. So don't take everything as scientific truth that comes from that source.

I really like the 3 bowls books. There are a bunch of different authors but it is the concept. They are vegetarian books, not vegan, but they usually have plenty of vegan recipes. Also, Everyday Vegan is a great cookbook. Let me know if you have any questions! Good luck!

emoticon So, I have decided (after much soul searching) that I am going to go Vegan. Yesterday I read "Skinny B*+ch" by Rory Freedman and Kim Barnouin. WOW! What an eye opener?! I knew that overly processed foods were bad for you and all... but holy cow. Pardon the pun. I didn't realize just how bad 90% of the stuff that I eat on a regular basis really is for me. I mean, I am from the Deep South (Baton Rouge, Louisiana)... meat and deep fried everything is our way of life. So this is going to take a lot of hard work and discipline. But, as I keep telling myself lately, "I am worth it."

I am going to Whole Foods after work today to stock up on fresh vegetables and fruits, and granola (which I have fallen in LOVE with lately. I could seriously eat it for all three major meals of the day.) So, my question for everyone who actually reads this is...

Do you have any suggestions for good vegan dishes, vegan cookbooks, brands of food, informational websites... just anything that would make this transition a little easier? I greatly appreciate any and all input from my Sparkpeople Family!

The support you guys offer is second to none!

The whole wheat flour makes for a dense muffin, which I like. You only need to eat one! If you want a lighter muffin try using whole wheat pastry flour, which is more finely ground and available in the bulk bins at larger grocery stores.
