Fry 2 slices of low sodium bacon, added some chopped onion, added the collard greens and then added some water, vinegar, and a little pinch of sugar. Simmer for abut 45 minutes.
Bring a large pot of salted water to a boil. Add the collard greens in batches and cook until just tender, about 10 minutes. Drain then heat Olive oil in a large saucepan over medium heat. Add garlic and cook, stirring, for 1 minute. Add the greens, 1 teaspoon salt, and ½ teaspoon pepper. Cook, tossing often, until wilted and tender, 3 to 4 minutes
Collard Greens do come frozen....I add a handful to soups that I make...add to brown or wild rice.....sometimes I use Sesame oil as it gives the collards more of an Asian flavor..

One of my favorite things to eat when I visit southern states is collard greens, but they're not usually available where I live. I got a gorgeous bunch of the raw greens yesterday though, so could anyone give me some tips on how to prepare them? Thank you!
