Low carb means higher in lean protein and non-starchy vegetables.

I suggest: Use a recipe you like, but make some substitutions to make it leaner. Use 1/3 of the beans called for in the recipe. Steam some extra non-starchy vegetables, and substitute them for a third of the beans. Substitute an additional lean protein for another third of the beans. Skip the oil that you would usually use for frying; you can blend some of the vegetables. Make the sauce with much less liquid as the veggies will add some. Use stock instead of water to increase the flavor.

I have found several low carb chili recipes but I am concerned about the amount of fat in a single cup serving (18-24g!).

Do you have any recipes that are lower in fat? Because I LOVE chili so much!
