This sounds delicious, especially with summer coming up! I am going to invite him over next weekend and have this made the day before so it will be really cold..
I will just leave the cheese out, and I have a recipe for a Italian dressing which would be perfect for this..
And thank you for your kind words, I always think it is important to think of ones friends first, especially if you want to have them over for dinner :-)

You can make an easy, chilled, pasta salad with a nice Italian dressing and veggies like cucumber, carrots, peppers, olives, and I would add some cheese chunks too, but that is up to you and your friends dietary needs. By the way, I think it's super nice of you to be concerned with your friends needs.

Just saw this on youtube.com and was considering it:

Saute spinach with garlic and olive oil set aside
Cook pasta and drain

Cook up a whole pan of sliced potatoes until golden brown, just as if you were making hash browns

Mix it all together and serve...tried finding the link, but now I can seem too.

This sounds yummy! I can always skip the cheese since he can't have it..But I never thought of adding broccoli to pasta before, neat..

We love spaghetti and broccoli !!

Spaghetti and Broccoli

1 pound spaghetti
1 large head of broccoli cut into florets

Boil them together, pasta takes about 10 minutes
and that is enough time for the broccoli to cook

While that is cooking
Saute in a fry pan some butter and some olive oil
and as much garlic as you like.

Once pasta/broccoli is done drain, but save 1 cup of the pasta water.

Place pasta back into the pasta pot, add the garlic mixture and as much
water as you want so the pasta is not dry.

Add some parmesan cheese to taste !!!!!! YUMMMMMM

I can use his treat cheese (not really cheese, but what the heck he likes it), and I can leave the chicken and anchovies out, and this would be perfect! Will try this weekend, thank you

I work for a culinary school and just recently had a master chef from Italy visiting us and he made the most amazing pasta dish ever! It does take some time so it may be more of a weekend dish and you can hold it for a few days. Anyhoo you take fresh broccoli and cut it into bite size pieces and get a nice chicken stock or broth and heat it up a sauce pot. Add the broccoli to a large skillet and cup by cup add the broth to the broccoli until it disappears..and keep repeating for about 30-45 minutes. When its done you can add some red pepper flakes and anchovie if youre daring enough haha. It end up being a super creamy broccoli sauce. Top with some parmesan cheese and maybe some grilled chicken..yum!

Off the top of my head I'd suggest using olive oil and fresh herbs in place of a tomato or dairy based sauce. Something along the lines of a pasta primavera, or a pesto without the cheese (I've seen this in stores, and I would imaging you can make it yourself with recipes online). Use lots of vegetables that he can eat, like mushrooms, asparagus, garlic and onion, broccoli, and squash. This will add flavor.

Hi everyone :-)
I am looking for some pasta recipes so I can have a friend over for dinner one night. He has special diet needs so I am kind of stumped.
He LOVES pasta, but he can't have tomatoes,cheese, eggs, dairy, soy of any kind or wheat.

No problem on the pasta I found some rice pasta I know he can have, I found the cheese he can have on occasion, (made with pea protein, which I have no idea what that is, nor am I sure I want to know ha ha ha), but what in the world do I use instead of tomato sauce????
I would also prefer a cheese idea as well, as I said the cheese is some thing he can only have once and a while because of the yeast in it, but I can use it for that night....
So anyone have any recipes that I can do for him? I figure vegan is the best choice as he doesn't eat meat, thank you everyojne..
