I make Chinese stir fry pretty frequently and there a lot of different veggies you can add to that. I use baked chicken nuggets instead of frying the meat. I add the smallest amount of oil for the veggies to cook. Or you can steam them. And I usually have leftover rice in the fridge so it's pretty fast to make. Definitely measure the sauce- For 1/2c rice 1/2c veggies and 4 nuggets I use 2T sauce.

I also would put them in a bag and freeze them. I still like to empty my fridge of any leftovers once a week and make a pot of soup with them, adding any from the freezer. You might need a broth or not depending on leftovers. I don't add any spices until done. At that point I do a taste test to decide what spice to add.
I have added everything from pork n beans, mac n cheese and spaghetti and it all tastes wonderful, My kids always liked this although they tease me about it these days.

Hmmmm, I like the vegetable soup idea and the idea of freezing the vegetables. I just made soup last week and I have some in the freezer. I ended up tossing the red and green peppers (with a half onion that I sliced) into the crock pot with some sliced up chicken sausage. And then I boiled the leftover baby carrots and broccoli in water and chicken broth (and sliced up a couple baby carrots after they boiled and put them into the broccoli and cheese rice I had for lunch).

Hi,
My first inclination would be to make homemade vegetable soup. You can by MSG (monosodium glutamate) free chicken broth powder, or MSG free beef broth powder at Bulk Barn in Canada and probably any Health Food store in the States. Plus they have VEGETARIAN broth powder! Of course, you can buy Bovril cubes or powder packs but I'm pretty sure they have MSG.

Just put the powder in right amount of water...then add your vegetables. I somethimes add macaroni
to the soup and cook until macaroni is cooked....about 20 -25 min.

Also you can make great stir fry vegetable over bed of rice (or noodles) . Yum. Fast, easy and low calories for both the soup and the stir fry. Use Olive Oil as that's good for you!

A friend of mine makes vegetarian lasagna with lots of veggies that delicious!
I'm sure you could Google........vegetarian lasagna recipe.....and find a recipe to suit you.

I take all my leftover veggies and place them in a freezer bag or container and freeze it. I do the same any night I have leftover veggies, by just adding to the bag. When I decide to make a big pot of homemade vegetable soup, I add all my frozen veggies I have accumulated. Makes a great pot of soup.

I have leftover broccoli, string beans, carrots and green peppers from Thanksgiving (some cut, some not cut). What can I make? I am thinking of steaming the broccoli, string beans and carrots and freezing them. Maybe I will saute the peppers and freeze them too.

But, if anyone has other ideas...let me know.
