Hi! The 2013 season blessed us with an abundant harvest of eggplants and I have been scouring the internet searching for delicious ways to make these aubergines beyond the traditional roast, parmigiana, lasagna, & baba ganoush recipes..its been a challenge! Time is running out on their viability, and at least I can *can* them - but I'm new to that too..should I just roast them & can the pulp?

I prefer vegetarian style..but ANY eggplant creation suggestion (including the traditionals) that is confirmed delicious is most welcome..
PS..We also have a mega abundance of tomatoes!
